Washington State is the top apple growing state in the United States. This cake highlights its delicious apples and tastes particularly good with Fuji apples. If desired, substitute pears for apples. For a boozy twist, replace the lemon juice with your favorite liqour.
The Cake 🎥
YOU WILL NEED
VANILLA CAKE MIX
WET INGREDIENTS
3 large eggs (about 189g, weighed with shell)
⅔ cup mild extra-virgin olive oil (134g)
1 cup sour cream (227g)
2 tablespoons juice and zest from a lemon
STIR-IN
2 medium baking apples peeled, cored
and coarsely chopped (3 cups, 340g)
½ cup chopped walnuts, optional
¼ cup diced candied ginger, optional
INSTRUCTIONS
- Preheat oven to 325°F. Grease a 9 or 10-inch tube pan and line the bottom with parchment paper.
- Beat eggs at high speed for 3-5 minutes until light and fluffy. With the mixer still running, gradually add the olive oil in a thin drizzle and beat until thick and creamy.
- Add the sour cream, lemon juice and zest and the vanilla cake mix. Beat on low speed until well combined, about one minute.
- Stir in chopped apples and, if desired, walnuts and candied ginger.
- Pour batter into prepared pan. Bake for 50-55 minutes until toothpick inserted in center comes out clean or with a few moist crumbs. Cool in baking pan for 5-10 minutes before unmolding.
The Glaze

1 cup powdered sugar (100g)
2 tablespoons lemon juice
1 tablespoon melted butter
½ teaspoon ground cinnamon
INSTRUCTIONS
- Stir all ingredients together.
- Drizzle over cooled cake.
